Kale is a green leafy vegetable and a member of the cabbage family. Kale is just 36 calories per cup and is considered a super food for its abundance of anti-oxidant, anti-inflammatory and anti-cancer nutrients. It is rich in Vitamin A, C and K and is also a good source of fiber. Kale has a woody taste and can be eaten raw or cooked. Add this super vegetable to salads, soups and stir fries, and please enjoy one of my favorite recipes below from Joy Bauer, RD.
Easy Kale Chips:
Ingredients
- Oil spray (recommended: canola or olive oil)
- 1 large bunch kale
- Kosher salt
Preparation
Preheat the oven to 400 degrees. Coat two large baking sheets with
oil spray. (The chips will be crispiest if baked directly on the baking
sheet, without aluminum foil). Trim the ends off the kale and cut the leaves into 2-inch pieces.
Divide the kale pieces between the two baking sheets and spread them
into a single, even layer. Liberally mist the kale with oil spray and
lightly sprinkle with salt. Bake for 10 minutes, or until the kale is
crispy to the touch and the edges are beginning to brown.

Serves 2 to 4
I love the idea of healthy snacks. I also am intrigued by the idea of "super foods." This recipe seems super easy and sounds like it would be delicious! I personally love kale and have been eating it for years. It is not too expensive and provides so many benefits.
ReplyDeleteI made Kale chips about 4 months ago and I like them. But, they do not like me. For some reason when I eat kale or bok choy, in any significant amounts, I get dyspepsia that lasts for hours.
ReplyDeleteGood for you foods are not supposed to hurt you but my body certainly does not appreciate these dark leafy greens in large amounts. Do you have any idea what is in these two green vegetables that causes me such discomfort almost immediately after I eat it? My suspicion is some oxalate.
I'm not a real fan of raw kale but I do love it sauteed with a little oil and garlic and the chips are great too and some what addictive.
ReplyDeleteThis recipe looks very yummy (I also saw it on Pinterest earlier). I love the idea of using random vegetables and greens in new ways to help me incorporate them into my diet. I know that many of us have our produce aisle staples and I will definitely but some kale this week and try this out! Thanks for the healthy idea.
